1 Recipe 2 Ways : Cookie Dough Dip to Baked Blondies


Hi there, here is one of the recipes I presented during Montreal Vegan Festival 2018. The theme was "How to cook chickpeas: Sweet and Savoury ways".

This is the sweet way, a vegan cookie dough dip that matches my criteria: Easy. Healthy. Tasty.

What is fun with that recipe is that you can enjoy it two ways, raw like cookie dough or baked like a cake!

Let's cook!

Serving: Approx. 9 servings

Time: 10 minutes to prep and if you decide to bake, 20 minutes to cook

INGREDIENTS

  • 1 1⁄2 cup of cooked chickpeas

  • 1⁄4 cup quick oats

  • 1⁄4 cup peanut butter (or nut/seed butter of your choice)

  • 2 tbsp maple syrup or more according to your taste (or other sweetener of your choice)

  • 1⁄4 cup plant based milk

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1⁄4 tsp salt

  • 1⁄4 tsp baking soda

  • 1⁄2 tsp baking powder (only if baking)

  • 1/3 cup chocolate chips

INSTRUCTIONS

1. Although this step is optional, I recommend removing the little translucent skins of the chickpeas to obtain a smoother dip (and make chickpeas more digestible). To do so, scoop them out onto a clean dish towel, fold the towel to cover, massage and rub them with both hands to create friction (do not apply too much force or the chickpeas might break into small pieces), unfold and you shall then be able to slip the skins off fairly easily;

2. Put all the ingredients except for chocolate chips into your high-speed blender or food processor until smooth (the smoother the better!);

3. Add more maple or vanilla or cinnamon according to your taste/ more plant based milk for a thinner consistency;

4.Then add chocolate chips and pulse one more time to incorporate them;

If you diced to go for the dip the recipe is now done. You can enjoy it with sliced apple, vegan graham crackers, as a cake icing, on toast or pancakes topped with fresh fruit, etc. Get creative!

If you decide to bake it like a cake:

5. Pour the mixture into a lightly greased pan and spread out evenly with a spatula (you can slightly wet you spatula to prevent it from sticking too much).

6. Bake in a preheated oven at 350°F for 20 minutes or until the top is set and slightly golden brown.

7. Let cool for at least 15 minutes, then enjoy! Made 9 portions.

Don't hesitate to do a double batch to double the fun and have both the raw and baked version!
